Easy’s still good! Sometimes all you need is a quick fix and it’ll still be just as satisfying. Looks fantastic; I’m going to file this for later. :)

Make sure you use one of the large brick-type blocks of cream cheese, not the half-sized ones. Then just pop it in the fridge for a while.

I can’t wait for the seasonal custard/pudding type mixes, Jell-O makes a pumpkin pie flavoured one in the autumn that I think would make an amazing cheesecake. So far my other favourite combos have been this one, and this one here

Which was lemon pudding with lemon-curd on top.

Cookies-and-cream flavour mix with a chocolate crust is also really good.
